Edit: Seems theres 4 PS2 games that will run @ HD resolutions natively. The NTSC U/J versions of Gran Turismo 4 can run at 1080i.
But that is upscaling, on an emulator probably, the best thing you can get out of the PS2 is with a VGA adaptor, and that would be as you said 576p at most. And very few games support VGA (unless you have a modchip that forces it), and even then the games itself need to have high res textures, which is unlikely as it is PS2. So only emulators for now

Upscaled to 1080p with the uncompressed textures which are about 720p. Vid description doesn't give a good overview of how it works.
